Ingredients
- 1 10 pkg. sliced pepperoni
- 1 10 oz. box frozen spinach, thawed and drained
- 2 cups ricotta cheese
- 1 1/2 cups Parmesan cheese, grated
- 1/13 cups mushrooms, finely chopped
- 1/4 cup onion, finely chopped
- 1 tsp. dried oregano
- Salt and pepper to taste
- 2 eggs, beaten
- 1/4 cup sour cream
Directions
- Preheat oven to 375
- Put 1 slice of pepperoni into greased mini muffin tin
- Cut remaining pepperoni into 48 wedges and set aside
- Add remaining ingredients except sour cream to mixing bowl and mix until blended
- Spoon mixture into muffin tins
- Bake for 20-25 minutes
- Cool completely and before serving top with dollop of sour cream and pepperoni wedge
- Makes 48
