Elegant Skillet Lasagna Recipe
A wonderful skillet to oven recipe from Williams-Sonoma.

Ingredients
  • 1 Tbs. Olive Oil
  • 1 Yellow Onion, diced
  • 4 Garlic Cloves, minced
  • Salt (Kosher) and freshly grounded Pepper, to taste
  • 1 lb. mild Sausage, casings removed
  • 4 Tbs. (1/2 stick) unsalted Butter
  • 1/4 cup All-purpose Flour
  • 3 cups Milk
  • 1 cup grated Parmigiano-Reggiano cheese
  • 1/4 cup plus 1 Tbs. chopped Parsley
  • 1 Tbs. miced fresh Sage
  • 9 dried Lasagna Noodles, cooked al dente
  • 3 lb. Butternut Squash, peeled, neck portion sliced into wide, thin sheets

Directions
  1. Preheat oven to 400 degrees.
  2. In large nonstick fry pan over medium-high heat, warm oil.
  3. Cook onion 8 minutes.
  4. Add garlic, salt and pepper; cook 30 seconds.
  5. Transfer to bowl.
  6. Cook sausage, breaking it into pieces, 8 minutes.
  7. Add to onion mixture.
  8. In fry pan over medium heat, melt butter.
  9. Add flour, cook, stirring 1 minute.
  10. Slowly stir in milk; increase heat to medium-high; cook 8-10 minutes. Transfer to bowl.
  11. Stir in 3/4 cup cheese, 1/4 cup parlsey, sage, salt and pepper.
  12. Spread 1/3 cup sauce on bottom of fry pan; top with single layer of 3 noodles.
  13. Top with 1/3 cup sauce, 1/3 cup sausage and layer of squash slices.
  14. Repeat layering of sauce, sausage and squash 5 more times, replacing squash layer with noodles after every 2 layers of squash.
  15. Top with remaining sauce and cheese.
  16. Bake 45 minutes.
  17. Sprinkle with 1 Tbs. Parsley.
  18. Let stand 15 minutes.
