Cleveland Snowstorm Chicken

- 2 boneless skinlessw chicken breasts (sent a few back with her the last time she was home) shopping list
- 1 orange, zested and juiced (left from the toe of her Christmas stocking) shopping list
- 2 heaping T. dark brown sugar (dried out because the bag was open in the fridge) shopping list
- 1 t. stoneground mustard shopping list
- 1 t. curry powder (an extra bottle sent back with her when she was in college that was never opened) shopping list
- 1/2 t. granulated garlic (yep, sent home with her a while ago, but she DOES use this...and needs some more) shopping list
- splash or two of water shopping list
- pomegranate seeds (yep, from the Christmas stocking!) shopping list
- fresh blackberries (on sale at the store and brought up for the visit) shopping list
How to make it
- Brown chicken on both sides in a little oil and remove to baking dish. Salt and pepper chicken.
- In the skillet put in the zest and juice of an orange, and everything else but the pomeganate and blackberries. Deglaze the pan and cook down a little. Pour sauce over chicken and bake at 375 for hallf an hour or until juices run clear when pierced with a knife.
- Serve chicken garnished with pomagranate seeds and blackberries and serve with brown rice and edamames. Delish! Who knew you could put together a gourmet meal in the world's tiniest kitchen?!
