You will love this recipe. I love to make it for my family on a lazy weekend morning. It is also a good one for brunch. Enjoy!

Ingredients
  • 2 cups shredded peeled potatoes( about 1 pound)
  • 1 1/2 cups (6 ounces) shredded cheddar cheese, sivided
  • 1 tsp. salt, divided
  • 4 eggs
  • 1/2 cup milk
  • 1 cup chopped fully cooked ham
  • 1/2 cup chopped onion
  • 1/2 tsp. pepper

Directions
  1. Combine potatoes, 1/2 cup cheese and 1/2 tsp. salt.
  2. Press into the bottom and up the sides of a greased 9-in. pie plate
  3. In a bowl, beat eggs and milk.
  4. Add ham, onion, pepper and remaining cheese and salt.
  5. Pour over potato crust( dish will be very full).
  6. Bake at 350 degrees for 45- 50 minutes or until a knife inserted near the center comes out clean.
  7. Let stand 5 minutes before cutting.

An excellent potato pie recipe - no less than I would expect from an Idaho girl! I will be trying this one...you know how the Irish love their potatoes!
