How to make it

  • In a mixing bowl, combine dry ingredients.
  • In another bowl, beat egg yolks.
  • Add buttermilk, sourcream and oil; stir into dry ingredients just until combined.
  • Beat egg whites until stiff peaks form; fold into batter.
  • Bake in a preheated waffle iron according to manufacturer"s directions until golden brown. Garnish with apricots and mint leaves if desired.
  • Serve with warm maple syrup! My kids love to put whip cream on these too!!

    Oh yum, michellem, these do sound absolutely delish (the sour cream would keep them so moist!). This will be the next waffle I try (maybe when I visit little Maggie and Gus in Dec??) - great post...thank you for sharing this family favorite!

    I tried this recipe and liked it. It made a good waffle with flavor and good texture but was a bit labor intensive, with the egg whites needing to be whipped and folded in, but delicious.
    You would have to see the tiny work area that I was working in to understand labor intensive. TINY areas don't lend well to a mixer AND an extra bowl!
    The waffles were worth the effort!
