Hot Artichoke Parmesan Dip Recipe
I have loved this recipe since the first time I had it back in the 1980s. Sometimes, I use half the mayonnaise and use it as a side dish.

Ingredients
  • 2 cans artichoke hearts, drained
  • 1 cup mayonnaise
  • 1 cup grated parmesan cheese (freshly grated if possible)
  • 2 cloves of garlic
  • 1/4 tsp cayenne pepper
  • salt to taste

Directions
  1. Preheat oven to 350F
  2. Either chop artichoke hearts and garlic finely or grind them in a food processor.
  3. In a large bowl combine all ingredients.
  4. Place in a 1 quart baking dish.
  5. Sprinkle with a little more cayenne.
  6. Bake about 30 minutes until the top browns.
  7. Serve the "traditional" way with wheat thins.

This sounds very similar to a dish that I make. Sometimes I add spinach, sometimes I use yogurt or light cream cheese instead of mayo. Your take on it sounds great!
