Ingredients
  • 1 large package banana flavored pudding and pie filling
  • (6 serving size) (You Can Use Vanilla Pudding If You Like)(Not Instant)
  • 3 egg yolks, slightly beaten
  • 3 3/4 cups milk
  • 30 vanilla wafers
  • 2 large ripe but firm bananas, sliced
  • 3 egg whites
  • dash salt
  • 1/3 cup sugar

Directions
  1. In a saucepan, combine pudding mix, egg yolks, and milk.
  2. Cook over medium heat, stirring, until mixture comes to a boil.
  3. Remove from heat. Arrange a layer of vanilla wafers in bottom of a 2-quart baking dish.
  4. Add a layer of banana slices and then a layer of pudding.
  5. Continue layering the vanilla wafers, banana slices, and pudding, ending with the pudding.
  6. Beat egg whites with the salt until foamy.
  7. Gradually beat in the sugar then continue to beat until mixture forums stiff shiny peaks.
  8. Spoon meringue over pudding, spreading all the way to the edge of dish to seal.
  9. Bake at 375° for about 10 to 15 minutes, until meringue is cooked and lightly browned.
  10. Serve warm or chilled.
  11. Store in refrigerator.

This sounds very, very good. I still do mine the old fashion way without the pudding but I will try your way for a change.

I've been craving a banana pudding lately! Your recipe sounds simply divine! Will make soon!


I made this last night, Chef. I don't know why, but after baking this, the pudding inside turned to liquid and never stiffened back up. what did I do wrong? Maybe I used the wrong kind of banana filling?


Well, I'm back here again! I found the "Cook and serve" pudding at the store and decided to try again. Everything came out great this time! I used 2(3 oz.) pudding packs, since each of them called for 2 cups of milk. Posted the pics, you can see in the second picture that the pudding is of a custard consistency. Thanks again,
