Southern banana pudding by chefirish

    OK, I hate to be a Simon on GR, but this DID NOT COME OUT! It sounded so good, and I gave it a 5. I couldn't wait to make it! Last night I got all the needed ingredients and made it. It was great up to a point of baking. Here's what happened. I made the pudding, it was thick(good thing). Assembled the pudding, topped with the meringe(still great), baked according to instuctions. It came out of the oven looking perfect! But then, when I cut into it, the pudding indside turned into liquid, the wafers turned mushy from baking. I thought maybe if I put in in the fridge it would stiffen up. After a night in the fridge, it's still a liquid soup inside. If I only didn't bake it, it could have been saved. Had to throw away a whole batch. Maybe someone can prove me wrong and make this. I never baked banana puddings before, always made them cold. Would love for someone to find my mistakes on this one.

    Yes, maybe baking it was the problem...could of caused the pudding to break down.

    Juels - that sounds like waaayyyy too much milk. I would have to check that size box of pudding, but, I think that it calls for 2 cups or so. That would be the problem. But, to most of us in the south it's not banana pudding if it uses pudding from a mix - lol, so, I don't know. The bananas give off some liquid, too, and if they are being baked, which I never heard of either, they would give off even more. But, the next time I tried this recipe, I would double check the box. There would be no need for more milk than called for on the instructions.

    Yes, I thought that about the amount of milk, and I added an extra pudding container to it when I mixed it. The weird thing was, that after I made the pudding on the stove top, it thickened up very nice. it was perfect! but after baking it, it turned to water! That's why I said that I could have still saved it if I didn't bake it.

    Recipe looks close to the one I use. I'm not sure you want to boil the eggs. If you used an instant powder mix, it could cause trouble when baking. Mother says the banana flavor pudding does not go well when making banana pudding. Says to use vanilla or butterscotch.

    The ingredients in the boxed pudding are largely sugar and flour with a little flavoring. And darned expensive too. You have everything in your cupboard to make the custard without going to the box.

    It's a personal preference but I don't like crunchy wafers. Pudding should be chilled overnight or 24 hours so the wafers can take in some moisture from the pudding. I'm not talking mushy, just softer than crisp.

    Thank you everyone that tried to help! I used powdered pudding mix, yes. The directions said to use a banana flavoured pudding/pie mix. that's what it said on the box. Chef irish e-mailed back to me, she said she forgot to specify in her recipe not to use the instnant pudding. she made changes to the recipe. I guesse that was the problem. Thanks, Points, for providing the link to the home-made custard, I'll check it out!

    All this talk about banana pudding made me think how long it has been since I have had some. Just returned from the store with the fixin's. Might have to wait a couple of days to let the bananas brown up with sugar spots.
