Ingredients
  • A full pot of French Roast coffee
  • 1 oz ( per serving ) Bacardi 151 rum
  • 1 oz ( per serving ) TIa Maria liquer or Kahlua ( depending on availability )
  • 4 oz Whipping Cream
  • 2 tsp powdered sugar
  • 2 TB granulated sugar (see steps 2 and 4)
  • 1 lemon, cut into 8 wedges
  • 2 heat resistant coffee cups, preferably clear tempered glass ( but, you can find THICK glass coffee mugs at Bed Bath and Beyond, for a couple of bucks apiece.... )
  • A shaker of cinnamon, for the final step

Directions
  1. Whip the 4 oz whipping cream and powdered sugar to a stiff consistency, and set aside ( No blender ? Use a whisk - it creates a creamy, most decadent topping.... )
  2. In a small saucer, evenly distribute the granulated sugar
  3. Run a lemon wedge around the perimeter of the coffee cups ( see my note in the intro about using clear glass....)
  4. Dip the cup in the sugar to "rim" ( much like salt on a margarita glass.... )
  5. Pour 1 oz Bacardi 151 in each cup ( 1/2 oz if you wish to cut back on the alcohol content )
  6. Light with a "flame stick" or match...
  7. Rotate the cup to crystallize the sugar with the flaming rum, just until the sugar starts to sag around the rim.
  8. Set cups down, and pour in the 1 oz shot of Tia Maria or Kahlua ( mixture should still be burning )
  9. Pour coffee into cups, watching the ignited liquor "float" to the top of the cup.
  10. Top with the whipped cream and cinnamon, and enjoy !!!
