Ingredients
  • 1tsp ground cinnamon
  • 1tsp ground coriander
  • 1tsp ground tumeric
  • 1/4tsp cayenne pepper
  • 1/4tsp ground cardamom
  • 1/4tsp ground cumin
  • coarse salt and ground pepper
  • 2Tbs extra virgin olive oil
  • 1 whole chicken(4lbs) quartered,skin on
  • 1 lwmon,quartered

Directions
  1. Place a rimmed baking sheet on the center rack of oven,and preheat oven to 450. Mix spices,2tsp. salt,3/4tsp pepper and oil in small bowl. Rub spice paste all over chicken.
  2. Carefully arrange chicken in single layer on hot sheet,and arrange lemon wedges around chicken. Bake till chicken registers 165 on instant-read thermometer and juices run clear,30 to 35 mins. Let stand 10 mins. Season with salt and pepper,and serve with pan juices and roasted lemon wedges on the side.

I love the spice combo here! I might make this using chicken thighs instead of the whole chicken. Sounds yummy!
