How to make it

  • Saute garlic in butter.
  • When sizzling hot, add veal and brown.
  • Sprinkle flour over meat.
  • Add onions, seasonings, capers and wine and cover.
  • Allow liquid to come to a boiling point and cook for about 20 minutes.
  • Saute sliced mushroom in 1 tablespoon butter for 4 to 5 minutes.
  • Add mushrooms and olives to the veal.

    Scallopini has got to be one of my Italian faves - so good, but it never seems as good at home. Your recipe sounds as good as what I can get at the restaurants, so I will have to give it a try...nice flavors!
