Veal Scallopini Recipe

Ingredients
  • 1 pound thinly sliced veal
  • 2 tablespoons butter
  • 1 clove garlic
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • Pinch of sage
  • Pinch of nutmeg
  • 1 tablespoon flour
  • 1 small onion
  • 1/2 cup sauterne
  • 1/4 pound mushrooms
  • 1 tablespoon stuffed green olives
  • 1 teaspoon capers

Directions
  1. Saute garlic in butter.
  2. When sizzling hot, add veal and brown.
  3. Sprinkle flour over meat.
  4. Add onions, seasonings, capers and wine and cover.
  5. Allow liquid to come to a boiling point and cook for about 20 minutes.
  6. Saute sliced mushroom in 1 tablespoon butter for 4 to 5 minutes.
  7. Add mushrooms and olives to the veal.

Love the addition of olives and capers here....yum!


Scallopini has got to be one of my Italian faves - so good, but it never seems as good at home. Your recipe sounds as good as what I can get at the restaurants, so I will have to give it a try...nice flavors!
