Eggplant Perfect

- 1 medium eggplant, peeled, cubed shopping list
- 3 tablespoons oil (olive) shopping list
- 2 tablespoons minced green onion shopping list
- 1 teaspoon garlic powder shopping list
- 1 tablespoon parsley flakes shopping list
- 1/2 teaspoon basil leaves, crushed shopping list
- 1/2 teaspoon thyme shopping list
- pepper to taste shopping list
- 4 large tomatoes, peeled, seeded, chopped shopping list
- 2 tablespoons parmesan cheese shopping list
How to make it
- Lightly brown eggplant in oil. Drain on paper towels and set aside.
- Combine onion, garlic powder, parsley, basil, thyme, pepper, and tomatoes.
- Cover and simmer 1/2 hour. Stir often. Add eggplant and simmer 10 more minutes.
- Put in 1 1/2 quart casserole.
- Top with Parmesan cheese and broil for 3 minutes.
- NOTE-This is wonderful served over pasta.

I have been to that site. Very nice recipes there. This is one of the better ones. We always have tons of eggplant at the end of the year. Never too many recipes...;-)~~
