Ingredients
  • 1 lb. bulk pork sausage (sage flavored can be used, if you prefer)
  • 2 Tbsp. finely chopped onion
  • 6 Tbsp. all-purpose flour
  • 1 qt. (4 cups) milk
  • 1/2 tsp. poultry seasoning
  • 1/4 tsp. ground nutmeg
  • 1/4 tsp. salt
  • Dash Worcestershire sauce
  • Dash or two of hot pepper sauce
  • Hot biscuits

Directions
  1. Crumble sausage into a large saucepan; cook over med.-low heat. Add onion; cook and stir until tender. Drain, discarding all but 2 Tbsp. of drippings.
  2. Stir in flour; cook over med.-low heat about 6 mins., or until mixture bubbles and turns golden. Stir in milk.
  3. Add seasonings; cook, stirring, until thickened.
  4. To serve, slice biscuits and spoon gravy over halves.

Wifey not awake yet, and I'm getting really hungry. I love your combination of spices and seasonings in this recipe Babs! I never thought to use those spices in a recipe like this. I'm not sure what pepper sauce to use - What do you prefer? I do have one type on hand. It has a very nice mild flavour, but it's really hot. I may try that if I don't hear back from you. Thanks again for posting this Babs!


Oh yes - If I could only eat this stuff I would eat 2 biscuits with a LOT of gravy! I gained 5 lbs reading the recipe. Great picture!


We like breakfasty dishes for dinner instead of breakfast. This was my first time making biscuits and gravy and it was SO easy! I used pork patties instead of bulk sausage and they worked great. I was a little hesitant about the Worcestershire sauce because I don't usually care for it, but stuck to the recipe and am glad I did. It added a nice, subtle flavor that would have been missed if I had omitted it. I served the gravy over my homemade biscuits and we loved it! This may have been my first time making sausage gravy, but it won't be my last! Thanks for the recipe, babs!


Absolutely fantastic Babs, and a definate keeper! The sausage gravy had an awesome twist - Quite a kick. I had to sub the poultry seasoning with sage, thyme, and celery salt - I would have added savory as well if I had it, to help sub for the poultry seasoning. I made Keni's Cat's Head biscuits. There was literally nothing left of this meal - Every last bit was eaten. I used Cheyenne Pepper as you suggested Babs - You are right - Chilli Pepper would have been too over powering for the recipe. Keni's biscuit recipe is a definate keeper as well! A perfect combination!


Hi Babs! I got 4 biscuits with Keni's recipe. They were really big. I didn't have anything large to cut big biscuits, so I used a normal glass and cut each biscuit extra thick and then pressed them down to make them wider. I think the poultry seasoning in your sausage gravy is one of the main ingredients.


Made this for breakfast this morning, fantastic.
