Beer Braised Cabbage Recipe

This hearty side dish is a nice compliment for pork.

Ingredients
- 2Tbs unsalted butter
- 1 onion,chopped fine
- 1/2c beer,preferably light -bodied lager
- 1Tbs whole grain mustard
- 1/2tsp minced fresh thyme
- 1 small head green cabbage(about 1 ;b.),halved,cored and sliced thin
- 2tsp cider vinegar
- salt and pepper
Directions
- Melt butter in large skillet over medium -high heat. cook onion until softened,about 5 mins. Stir in beer,mustard and thyme and simmer until slightly thickened,about 2 mins.
- add cabbage and vinegar and cook covered,stirring occasionsally,until wilted and tender,about 8 mins. Season with salt and pepper.
