This is a cake that I have had so many complements on, every time I serve it. The pineapple, mandarin orange are a great combo.

I have tried this cake and it is a great recipe. The lady who gave it to me called it Sunshine cake and it does get rave reviews, as it is moist and flavorful. I substitute apple sauce for some of the oil to make it "healthier", and fold in the mandarin orange segments after I've mixed up the batter to keep them from breaking up too much. Good post,thanks.
