Mandarin Orange Cake Recipe

Ingredients

Cake

1 plain yellow cake mix (no pudding)

3/4 cup oil

4 eggs

1-- 11 oz. can of mandarin oranges with juice

Frosting

Fold together

1--8 oz container cool whip

1 small box vanilla instant pudding

1-- 8 oz. can crushed pineapple with juice

Directions

Mix all ingredience of cake together, by mixer for about 2 minutes until well blended.

Pour into a well greased and floured 9 x 13 baking pan, or 2 round 9 inch pans.

Bake 350 for about 30-35 minutes until springs to the touch.

When cool frost with icing.

I have tried this cake and it is a great recipe. The lady who gave it to me called it Sunshine cake and it does get rave reviews, as it is moist and flavorful. I substitute apple sauce for some of the oil to make it "healthier", and fold in the mandarin orange segments after I've mixed up the batter to keep them from breaking up too much. Good post,thanks.
