Hot And Flaky Crab Sandwich

This is my variation of a local Baltimore sandwich. While I usually fix this dish as an evening quick dish, the leftovers go really well as a breakfast dish. As has been pointed out, a Maryland version of creamed chipped beef.
Ingredients
- 1 lb lump crab meat shopping list
- 6 Tb butter shopping list
- 1 Tb flour shopping list
- 1 tsp worcestershire sauce shopping list
- 2 dashes Tabasco sauce shopping list
- 1/2 tsp salt shopping list
- pepper to taste shopping list
- 1 pt half and half shopping list
- sherry shopping list
- 8 slices toast shopping list
How to make it
- Melt the butter in a skillet. Stir in 1 Tb flour and blend with the flat side of a spatula until it begins to thicken.
- Slowly add the half and half and bring to a near boil.
- Stir in the crab.
- Add salt, Tabasco sauce, Worcester sauce, and pepper to taste. Add in enough sherry for good flavoring.
- When steaming, spoon over hot buttered toast. Add a second piece of toast and top with additional layer of crab. Season with a generous shake of seasoned salt and serve.
