Cranberry Upside-Down Coffee Cake

- 2/3 cup packed brown sugar shopping list
- 1/3 cup butter shopping list
- 1 1/4 cups cranberries shopping list
- 1/2 cup pecans, chopped shopping list
- 1/2 cup butter, room temperature shopping list
- 3/4 cup white sugar shopping list
- 2 eggs shopping list
- 1 teaspoon vanilla extract shopping list
- 1 cup sour cream shopping list
- 1 1/2 cups all-purpose flour shopping list
- 1 1/2 teaspoons baking powder shopping list
- 1 teaspoon baking soda shopping list
- 1/2 teaspoon ground cinnamon shopping list
- 1/4 teaspoon salt shopping list
How to make it
- Preheat oven to 350 degrees F. (175 degrees C).
- Wrap the outside of a 9" springform pan with aluminum foil to prevent leaking.
- Sift together the flour, baking powder, baking soda, cinnamon and salt.
- Set aside.
- In saucepan, over medium heat, combine brown sugar and 1/3 cup butter.
- Bring to a boil, then pour into bottom of springform pan.
- Sprinkle with cranberries and pecans.
- In large bowl cream together the butter and 3/4 cup sugar until fluffy.
- Beat in egg one at a time; stir in vanilla extract.
- Beat in flour mixture alternately with sour cream.
- Pour batter into pan.
- Bake for 60 minutes OR until cake tests done with toothpick.
- Cool in pan for 10 minutes.
- Invert onto serving platter and carefully remove the pan.
- Serve warm.

I have been on such a cranberry kick lately - don't know what it is, but I crave them on everything. This looks absolutely incredible and packed with cranberries...hmmmm...when can I plan company for breakfast and make this??? Nice one, LA.
