This is a recipe I invented on the fly whilst doing our annual Father's day outing in Yellowstone. Elected "Camp Chef", I was tasked with providing a reasonable meal for 8 hungry dudes in the mountains, with only an hour to prepare..... Yeah, I kn... More

Ingredients
  • 1 jar Ragu Garlic Parmesan sauce
  • 3 cans sliced new potatoes (you choose the brand....)
  • 1/2 cup grated cheddar
  • 1/2 cup grated mozzarella
  • 1/4 cup parmesan or romano
  • Optional: 1 small can diced green chilis, 1 tsp garlic powder

Directions
  1. Get a really cool can opener, like the XoXo ones....
  2. Open all the cans.
  3. Drain the potatoes, and put them in a 3 quart saucepan.
  4. Put the pan on the stove, or your campstove if you're actually camping !
  5. Stir in the Ragu sauce.
  6. Heat slowly - yes, I said SLOWLY to a low boil.
  7. Stir in the half the cheddar and mozzarella, and let them melt. If not cheesy enough, add more to your liking. Top with the Parmesan or Romano, and serve as the mood strikes....
  8. Note: If not garlicky enough, add the 1 tsp. Also, adding the green chilis adds a rather unique accent. Experiment !!!
  9. I actually had someone ASK for the recipe, and was somewhat embarrassed to tell them I just threw it together on the fly.
  10. Does posting it here make it a 'viable' recipe ???? '-)

Sounds delicious and easy to me....thanks!

Sure it's viable - maybe even certifiable! It sounds like the perfect answer to your challenge - what else ya gonna do with canned potatoes and a lot of cheesey stuff?!? I'm not sure I'll ever attempt this, but it was fun reading about it!

What a cool idea. I've got lots of canned potatoes and don't really know what to do with them. This might be the awnser. Thanks

Great recipe post!

Hey BBQ.. not only good-looking but smart to boot! You got my five on this one.
