How to make it

  • Cook sago or tapioca in 1 cup boiling water until tender, adding more water if necessary.
  • Boil rest of ingredients, except egg yolks for 15 minutes.
  • Add the cooked sago or tapioca, bring to a boil, then pour very gradually over the two well beaten egg yolks.
  • Serve Chilled.
  • Strawberry, raspberry, currant, plum, rhubarb or any dried fruit alone or in combination may be prepared the same way, or without the wine.
