Barack Obama Stew

- 2 T olive oil shopping list
- 2 shallots and 1/2 small onion, chopped fine (obviously, you can use all shallots or all onions, I just used what I had on hand) shopping list
- 2 stalks celery, chopped shopping list
- 1 large clove garlic, crushed, minced, or pressed shopping list
- 2 T smoked paprika (or less, to your taste) shopping list
- 2 T - 1/4 cup red miso shopping list
- 1 6-8 oz beef steak, trimmed of all visible fat, cut into bite sized pieces shopping list
- 2 turkey bratwurst, sliced shopping list
- 1 can diced tomatoes (fresh would work too, but this time of year it seems that the best flavored tomatoes are canned!) shopping list
- 1/2 large can vegetable juice (V8 type juice) shopping list
- 2 cups chicken stock (more or less, I didn't measure) shopping list
- 1/2 cup basmati rice shopping list
- 1/3 cup millet shopping list
- 1/4 cup red wine shopping list
- 1-2 T kecap manis (Indonesian thick, sweet soy sauce, if you don't have it on hand, improvise with soy sauce and some sort of sweetener, I'd try molasses) shopping list
- 1-2 cups frozen mixed vegetables shopping list
- 1-2 cups frozen sliced okra shopping list
- salt and pepper to taste shopping list
- Chopped fresh parsley or cilantro shopping list
How to make it
- Heat the oil in a large pot over medium heat.
- Sweat the shallots and/or onions a bit
- Add the celery and garlic, cook til translucent.
- Add the smoked paprika, steak, and bratwurst. Cook until the steak is just browned.
- Blend in the miso and the kecap manis.
- Add the tomatoes, vegetable juice, and chicken stock. Reduce heat, cover, and simmer about 15 minutes.
- Raise the heat until it nearly boils. Add the millet, reduce heat, cover and simmer about 20 minutes.
- Add the rice, cover and simmer about 15-20 minutes.
- Check how thick/runny your stew is. Millet really absorbs a lot of liquid, so add more vegetable juice, broth, or water as needed.
- Add the frozen mixed vegetables, okra, and wine. Simmer until the vegetables are heated through.
- Taste, add salt and pepper to your taste.
- Serve topped with fresh parsley or cilantro.
