How to make it

  • Preheat oven to 350
  • Drain the canned salmon reserving the liquid in a bowl. Save about half of the liquid to saute the onion, celery and carrots and the rest to satisfy the cats squirming at your feet.
  • Some folks like to make the dark skin and bones disappear. I'm not one of those folks. It all gets mushed together.
  • Put the salmon, lemon juice, sauteed veggies, parsley, eggs, yogart, salt, oats and pepper into a big bowl and mix it all together well.
  • Press into lightly greased loaf pan and shake it good to settle it into the pan. Because I'm cooking for two, I use two mini-loaf pans so I have one for now and one for later.
  • Bake @ 350 for 40-45 minutes till knife inserted comes out clean.

    Love your version of salmon loaf,we always used bread crumbs instead of oats. Family likes a creamy oniony sauce for topping the loaf and I always make buttered new potatoes and peas. Just something my mom used to do all the time. Good stuff, fun to compare recipes. Next time I'll try the oats and the sauteed veggie trick. :)

    Variation tonight in an attempt to get some veggies into my husbands system while not looking. Grated carrot, yellow bell pepper and onion melange. Microwaved on fresh veggie setting to soften. It makes a good appearance so I may not fool him.

    But we must continue to try.

    Thanks for the catch Bobwin. I had made some adjustments in the directions and apparently I adjusted out the oats. You are correct the oats get dumped in the bowl with everything else. I have put the oats back in the directions.

    I had run out of parsely yesterday so ended up substituting dried mint (about 2 tbsp) I really liked that flavor with the salmon. It freshened it up and showed off the lemon delightfully.
