How to make it

  • Melt 1 tablespoon butter in 10" skillet until sizzling.
  • Add chicken breasts and garlic.
  • Sprinkle with salt and pepper.
  • Cook over medium high heat, turning once until chicken is browned, 10 to 16 minutes.
  • Meanwhile stir together mustard and lemon juice in small bowl.
  • To assemble sandwiches, cut each slice of bread in half (do not cut muffins).
  • Spread 1 side of 2 halves with mustard mixture. (you have 2 with mustard on them)
  • Place 4 spinach leaves on the 2 bread halves with the mustard.
  • Place chicken on spinach leaves.
  • Top with remaining bread halves.
  • Melt 1 tablespoon butter in clean 10" skillet until sizzling.
  • Add sandwiches.
  • Cook over medium heat, turning once until bread browns, 4 to 5 minutes.
