Grilled Chicken Sandwich with Spinach

- CHICKEN: shopping list
- 1 tablespoon butter shopping list
- 2 4-ounce boneless, skinless chicken breast halves, flattened to 1/2". shopping list
- 1/4 teaspoon fresh garlic, minced shopping list
- 1/2 teaspoon salt shopping list
- 1/8 teaspoon coarse ground pepper shopping list
- FILLING: shopping list
- 1 1/2 teaspoons country-style Dijon mustard shopping list
- 1 teaspoon lemon juice shopping list
- 2 slices round sourdough bread OR English muffins shopping list
- 8 spinach leaves, trimmed shopping list
- 1 tablespoon butter shopping list
How to make it
- Melt 1 tablespoon butter in 10" skillet until sizzling.
- Add chicken breasts and garlic.
- Sprinkle with salt and pepper.
- Cook over medium high heat, turning once until chicken is browned, 10 to 16 minutes.
- Meanwhile stir together mustard and lemon juice in small bowl.
- To assemble sandwiches, cut each slice of bread in half (do not cut muffins).
- Spread 1 side of 2 halves with mustard mixture. (you have 2 with mustard on them)
- Place 4 spinach leaves on the 2 bread halves with the mustard.
- Place chicken on spinach leaves.
- Top with remaining bread halves.
- Melt 1 tablespoon butter in clean 10" skillet until sizzling.
- Add sandwiches.
- Cook over medium heat, turning once until bread browns, 4 to 5 minutes.
