Gang Up Pasta with Shrimp

- 1/2 pound spaghetti noodles shopping list
- 4 Tbs butter, divided shopping list
- 2 shallots, minced shopping list
- 1 cup mushrooms, diced shopping list
- 1 cup grape tomatoes, quartered shopping list
- 2 cloves garlic, minced shopping list
- salt and pepper to taste shopping list
- 1 pound medium shrimp, peeled and deveined shopping list
- 1/4 cup white wine shopping list
- juice from 1/2 a lemon shopping list
- 2 cups fresh spinach leaves, torn into bite sized pieces shopping list
- 1/2 cup half and half shopping list
- 1/4 cup shredded parmesan cheese shopping list
How to make it
- Cook spaghetti noodles in salted boiling water until al dente. Drain and toss with 2 Tbs of butter.
- While spaghetti is cooking, melt the remaining 2 Tbs of butter in a large skillet over medium heat. Sautee the shallots and mushrooms in the butter, stirring occasionally, until the mushrooms are tender.
- Stir in the grape tomatoes and garlic and season with salt and pepper. Continue sauteeing, stirring occasionally, until tomatoes are heated.
- Add the shrimp to the skillet and cook until just starting to turn pink, stirring once or twice. Mix in the white wine and lemon juice, reduce heat to medium low and let simmer until shrimp are opaque.
- Add the spinach and let wilt. Once the spinach is wilted, stir in the half and half and Parmesan cheese. Simmer until everything is heated through and the sauce is slightly thickened. Adjust salt and pepper to taste.
- Serve over cooked spaghetti.

This was delicious! Had to leave out the mushrooms cause I forgot I needed them and threw them in some stock :( Oh well, still VERY good though! I did have to add a little cornstarch/water to the sauce to get it to thicken quicker (we were hungry)...more
