Ingredients

1/2 pound spaghetti noodles

4 Tbs butter, divided

2 shallots, minced

1 cup mushrooms, diced

1 cup grape tomatoes, quartered

2 cloves garlic, minced

salt and pepper to taste

1 pound medium shrimp, peeled and deveined

1/4 cup white wine

Juice from 1/2 a lemon

2 cups fresh spinach leaves, torn into bite sized pieces

1/2 cup half and half

1/4 cup shredded Parmesan cheese

Directions

Cook spaghetti noodles in salted boiling water until al dente. Drain and toss with 2 Tbs of butter.

While spaghetti is cooking, melt the remaining 2 Tbs of butter in a large skillet over medium heat. Sautee the shallots and mushrooms in the butter, stirring occasionally, until the mushrooms are tender.

Stir in the grape tomatoes and garlic and season with salt and pepper. Continue sauteeing, stirring occasionally, until tomatoes are heated.

Add the shrimp to the skillet and cook until just starting to turn pink, stirring once or twice. Mix in the white wine and lemon juice, reduce heat to medium low and let simmer until shrimp are opaque.

Add the spinach and let wilt. Once the spinach is wilted, stir in the half and half and Parmesan cheese. Simmer until everything is heated through and the sauce is slightly thickened. Adjust salt and pepper to taste.

Serve over cooked spaghetti.
