How to make it

  • Cook spaghetti noodles in salted boiling water until al dente. Drain and toss with 2 Tbs of butter.
  • While spaghetti is cooking, melt the remaining 2 Tbs of butter in a large skillet over medium heat. Sautee the shallots and mushrooms in the butter, stirring occasionally, until the mushrooms are tender.
  • Stir in the grape tomatoes and garlic and season with salt and pepper. Continue sauteeing, stirring occasionally, until tomatoes are heated.
  • Add the shrimp to the skillet and cook until just starting to turn pink, stirring once or twice. Mix in the white wine and lemon juice, reduce heat to medium low and let simmer until shrimp are opaque.
  • Add the spinach and let wilt. Once the spinach is wilted, stir in the half and half and Parmesan cheese. Simmer until everything is heated through and the sauce is slightly thickened. Adjust salt and pepper to taste.
  • Serve over cooked spaghetti.

    Awesome! I'm so glad you liked it. I don't know if you're aware of this, but this was the "original" Gang-Up recipe at AR!! Laughingmagpie was the one who dared me to make a recipe with a random list of ingredients and it was so much fun that the idea caught on and now we do it pretty regularly. Hey...this recipe is also published over at AR, so if you want to leave a review/rating over there, please feel free!

    This was delicious! Had to leave out the mushrooms cause I forgot I needed them and threw them in some stock :( Oh well, still VERY good though! I did have to add a little cornstarch/water to the sauce to get it to thicken quicker (we were hungry) and that's the only other change I made! Thanks!
