How to make it

  • Split the pork tenderloin in half.
  • Rub each half with a little olive oil.
  • Sprinkle or rub the taco seasoning over the pork.
  • Sprinkle pork with cracked black pepper to taste.
  • If you are grilling the pork, Heat your grill.
  • Once your grill is well heated, place pork on and cook until pork is completely cooked.
  • Remove and let sit for a few minutes.
  • Cut pork into small bite size pieces.
  • Proceed to fixings!
  • Stove top:
  • Heat olive oil in a large skillet over medium high heat.
  • Cut pork into small bite size pieces.
  • Once the pan is really hot add the pork and cook for 6 to 8 minutes or until pork is cooked through.
  • Proceed to fixings!
  • Fixings:
  • Before serving:
  • Heat tortillas either by placing in foil and heating in the oven to warm(for about 10 minutes) or you can heat them in a skillet with a little oil.
  • If using the skillet method, heat pan with a little bit of oil(about 1 tsp) and cook tortillas a few seconds on each side.
  • repeat for remaining tortillas.
  • Drain on paper towels.
  • Make Pico De Gallo by combining all ingredients.
  • Place in a bowl and set aside until ready to serve.
  • Serving:
  • Place pork on platter with warm tortillas.
  • Set out fixings so everyone can build their own tacos using lettuce, pico de Gallo, sour cream and cheese.
  • You can also serve picante sauce on the side if you prefer!
  • Build tacos with pork, and your favorite fixings.
  • After building your pork taco, squeeze fresh lime juice over taco and enjoy!

    D! These sound so tasty - love the pico, and love the whole idea of pork tenderloin on a taco with all the fixings...I have several tenderloins in the freezer, so I will try to get this one on the table next week. Thanks for a great idea (and one I'm sure I will become addicted to!)...Krum
