You will never eat regular tacos again AKA Pork Tacos

- 2 packages of taco seasonings or chicken taco seasoning shopping list
- olive oil shopping list
- cracked black pepper to taste shopping list
- * 1 (1 1/2 to 2 pound) pork tenderloin, (diced into small bite size pieces) shopping list
- Pico de Gallo: shopping list
- * 2 large ripe tomatoes, diced and seeded shopping list
- * 1 small white onion, diced shopping list
- * 1/2 small red onion, diced shopping list
- * 1/4 cup fresh cilantro, chopped shopping list
- * 1/2 jalapeno, seeded and chopped shopping list
- * 1 clove of garlic, minced shopping list
- * dash of cracked black pepper shopping list
- * dash salt shopping list
- * juice of 1 lime shopping list
- Fixings: shopping list
- * corn tortillas shopping list
- * Fresh guacamole(if desired) shopping list
- * shredded Mexican blend cheese shopping list
- *shredded lettuce shopping list
- * sour cream shopping list
- * lime wedges (allow at least 1/2 lime per serving) shopping list
How to make it
- Split the pork tenderloin in half.
- Rub each half with a little olive oil.
- Sprinkle or rub the taco seasoning over the pork.
- Sprinkle pork with cracked black pepper to taste.
- If you are grilling the pork, Heat your grill.
- Once your grill is well heated, place pork on and cook until pork is completely cooked.
- Remove and let sit for a few minutes.
- Cut pork into small bite size pieces.
- Proceed to fixings!
- Stove top:
- Heat olive oil in a large skillet over medium high heat.
- Cut pork into small bite size pieces.
- Once the pan is really hot add the pork and cook for 6 to 8 minutes or until pork is cooked through.
- Proceed to fixings!
- Fixings:
- Before serving:
- Heat tortillas either by placing in foil and heating in the oven to warm(for about 10 minutes) or you can heat them in a skillet with a little oil.
- If using the skillet method, heat pan with a little bit of oil(about 1 tsp) and cook tortillas a few seconds on each side.
- repeat for remaining tortillas.
- Drain on paper towels.
- Make Pico De Gallo by combining all ingredients.
- Place in a bowl and set aside until ready to serve.
- Serving:
- Place pork on platter with warm tortillas.
- Set out fixings so everyone can build their own tacos using lettuce, pico de Gallo, sour cream and cheese.
- You can also serve picante sauce on the side if you prefer!
- Build tacos with pork, and your favorite fixings.
- After building your pork taco, squeeze fresh lime juice over taco and enjoy!
