Ingredients
  • 2 packages of taco seasonings or chicken taco seasoning
  • olive oil
  • cracked black pepper to taste
  • * 1 (1 1/2 to 2 pound) pork tenderloin, (diced into small bite size pieces)
  • Pico de Gallo:
  • * 2 large ripe tomatoes, diced and seeded
  • * 1 small white onion, diced
  • * 1/2 small red onion, diced
  • * 1/4 cup fresh cilantro, chopped
  • * 1/2 jalapeno, seeded and chopped
  • * 1 clove of garlic, minced
  • * dash of cracked black pepper
  • * dash salt
  • * Juice of 1 lime
  • Fixings:
  • * Corn tortillas
  • * Fresh guacamole(if desired)
  • * shredded Mexican blend cheese
  • *shredded lettuce
  • * sour cream
  • * Lime wedges (allow at least 1/2 lime per serving)

Directions
  1. Split the pork tenderloin in half.
  2. Rub each half with a little olive oil.
  3. Sprinkle or rub the taco seasoning over the pork.
  4. Sprinkle pork with cracked black pepper to taste.
  5. If you are grilling the pork, Heat your grill.
  6. Once your grill is well heated, place pork on and cook until pork is completely cooked.
  7. Remove and let sit for a few minutes.
  8. Cut pork into small bite size pieces.
  9. Proceed to fixings!
  10. Stove top:
  11. Heat olive oil in a large skillet over medium high heat.
  12. Cut pork into small bite size pieces.
  13. Once the pan is really hot add the pork and cook for 6 to 8 minutes or until pork is cooked through.
  14. Proceed to fixings!
  15. Fixings:
  16. Before serving:
  17. Heat tortillas either by placing in foil and heating in the oven to warm(for about 10 minutes) or you can heat them in a skillet with a little oil.
  18. If using the skillet method, heat pan with a little bit of oil(about 1 tsp) and cook tortillas a few seconds on each side.
  19. repeat for remaining tortillas.
  20. Drain on paper towels.
  21. Make Pico De Gallo by combining all ingredients.
  22. Place in a bowl and set aside until ready to serve.
  23. Serving:
  24. Place pork on platter with warm tortillas.
  25. Set out fixings so everyone can build their own tacos using lettuce, pico de Gallo, sour cream and cheese.
  26. You can also serve picante sauce on the side if you prefer!
  27. Build tacos with pork, and your favorite fixings.
  28. After building your pork taco, squeeze fresh lime juice over taco and enjoy!
