How to make it

  • Mix all the ingredients except currants, cinnamon sticks and crystallized ginger in a medium saucepan.
  • Simmer uncovered for 45 minutes until the sauce thickens.
  • Pears will remain crunchy.
  • Add currents and simmer 15 minutes more, partially covered.
  • Add cinnamon sticks and ginger pieces and refrigerate until ready to serve.
  • This will keep a week in the refrigerator.
  • It is good poured over a block of cream cheese and served with water crackers as an appetizer.
  • Or serve alongside a roast pork loin, or grilled pork chops.
  • We have even served it over ice cream for a different kind of hot/sweet taste.
