Spicy Pears

- 4 lbs. of Anjou pears, peeled, cored and cut in large chunks shopping list
- 3/4 cup of freshly squeezed lemon juice shopping list
- 1 cup of honey shopping list
- 1/2 tsp of ground cloves shopping list
- 1/2 tsp of ground ginger shopping list
- 1 tsp of ground cinnamon shopping list
- 1/4 tsp of chipotle chili powder-I tend to use a little more than 1/4 tsp. shopping list
- 1/2 cup of currants shopping list
- 2 pieces of cinnamon sticks (two inches) shopping list
- 2 pieces of crystallized ginger, coarsely chopped shopping list
How to make it
- Mix all the ingredients except currants, cinnamon sticks and crystallized ginger in a medium saucepan.
- Simmer uncovered for 45 minutes until the sauce thickens.
- Pears will remain crunchy.
- Add currents and simmer 15 minutes more, partially covered.
- Add cinnamon sticks and ginger pieces and refrigerate until ready to serve.
- This will keep a week in the refrigerator.
- It is good poured over a block of cream cheese and served with water crackers as an appetizer.
- Or serve alongside a roast pork loin, or grilled pork chops.
- We have even served it over ice cream for a different kind of hot/sweet taste.
