Ingredients
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 4 skinless, boneless chicken breast halves
  • Salt and pepper to taste
  • 1/2 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 2 teaspoons fresh tarragon, chopped

Directions
  1. Melt the butter and oil together in skillet over medium high heat.
  2. Season chicken with salt and pepper.
  3. Place chicken in skillet.
  4. Brown chicken on both sides.
  5. Reduce heat to medium, cover and continue cooking for 15 minutes OR until chicken juices run clear.
  6. Set aside and keep warm.
  7. Stir cream into pan, scraping up brown bits left from the chicken.
  8. Mix in mustard and tarragon.
  9. Cook and stir 5 minutes OR until thickened.
  10. Return chicken to skillet to coat with sauce.
  11. Drizzle chicken with remaining sauce to serve.
