Dijon Tarragon Cream Chicken

- 1 tablespoon butter shopping list
- 1 tablespoon olive oil shopping list
- 4 skinless, boneless chicken breast halves shopping list
- salt and pepper to taste shopping list
- 1/2 cup heavy cream shopping list
- 1 tablespoon Dijon mustard shopping list
- 2 teaspoons fresh tarragon, chopped shopping list
How to make it
- Melt the butter and oil together in skillet over medium high heat.
- Season chicken with salt and pepper.
- Place chicken in skillet.
- Brown chicken on both sides.
- Reduce heat to medium, cover and continue cooking for 15 minutes OR until chicken juices run clear.
- Set aside and keep warm.
- Stir cream into pan, scraping up brown bits left from the chicken.
- Mix in mustard and tarragon.
- Cook and stir 5 minutes OR until thickened.
- Return chicken to skillet to coat with sauce.
- Drizzle chicken with remaining sauce to serve.
