No-crust Sweet Potato Pie Recipe


NO-CRUST SWEET POTATO PIE Recipe
See recipe for cook time. I don't know were I got this but on the paper the recipe is by Niki Bolls.

Ingredients
  • 4 medium-size sweet potatoes, cooked and mashed
  • 1 cup sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup butter or margarine, softened
  • 1 egg
  • 1/2 to 1 teaspoon almond extract
  • Whipped cream

Directions
  1. Combine all the ingredients except whipped cream in a large mixing bowl; beat at medium speed of electric mixer until well blended.
  2. Spoon mixture into a 9-inch pieplate.
  3. Bake at 450 degrees for 25 minutes or until lightly browned.
  4. Serve warm or cool with a dollop of whipped cream.
  5. Yield: one 9-inch pie.

I'm gonna make this some time when Jeff isn't around! He hates sweet potato anything.


I made this one before and its delicious. I was impressed with it because I never expected it to taste so good without the crust.
