Ingredients

3 potatoes well scrubbed

Olive oil

Greek herbs, various spices or seasoned salts

Directions

Cut the potatoes into thick (3/4 - 1 cm) slices and arrange on a cookie sheet lightly greased with olive oil. Brush the top of each potato slice with olive oil and sprinkle Greek herbs, other herbs, or seasoned salts. Cook for 25-30 minutes at 350° F until potatoes are browning on top.

We sprinkle different spices on various slices and everyone in the family seems to have a favorite one.

Some of the spices we use for coating include Indian curry powder, herbs d’provenance, Old Bay Seasoning, salt and pepper, Italian herbs, Italian dressing seasoning, and garlic salt.

One of the great things about this recipe there is only 5 minutes prep before it’s in the oven. It’s an easy and tasty side for your main dish.

We do something like this but we use pesto that you can buy in the jar.... It is fast and good.

I had the pleasure last week of finding some Cypriot potatoes here. They were a bit pricey, but were they worth it. For the kind of side dish you're talking about here they are ideal & the best potato for deep frying. I just put some Creten oregano on them that i got from my last visit. Probally abit of useless info there as you're in SE Asia but i'd thought i'd just share that. Nice recipes you have, I've got a few marked down..Have fun..
