How to make it

  • Cut the potatoes into thick (3/4 - 1 cm) slices and arrange on a cookie sheet lightly greased with olive oil. Brush the top of each potato slice with olive oil and sprinkle Greek herbs, other herbs, or seasoned salts. Cook for 25-30 minutes at 350° F until potatoes are browning on top.
  • We sprinkle different spices on various slices and everyone in the family seems to have a favorite one.
  • Some of the spices we use for coating include Indian curry powder, herbs d’provenance, Old Bay Seasoning, salt and pepper, Italian herbs, Italian dressing seasoning, and garlic salt.
  • One of the great things about this recipe there is only 5 minutes prep before it’s in the oven. It’s an easy and tasty side for your main dish.

    I had the pleasure last week of finding some Cypriot potatoes here. They were a bit pricey, but were they worth it. For the kind of side dish you're talking about here they are ideal & the best potato for deep frying. I just put some Creten oregano on them that i got from my last visit. Probally abit of useless info there as you're in SE Asia but i'd thought i'd just share that. Nice recipes you have, I've got a few marked down..Have fun..

    We do something like this but we use pesto that you can buy in the jar.... It is fast and good.
