  • 10-12 Scotch Bonnet (habanero) peppers - the green ones are hottest so get a mix of half green, half red or orange
  • 1 large ripe mango - peeled, pitted and cut in chunks
  • 1/2 red onion - large chop
  • 1 small bunch of cilantro (with stems) - washed
  • 1 lime - juiced
  • Pinch salt

Directions
  1. *WEAR GLOVES while seeding and de-ribbing the habaneros. The oils can blister your skin and even after washing your hands, the oils can remain for up to 8 hours afterwards. I remove the seeds because I don't enjoy biting into them - I find them bitter - but if this isn't hot enough for you, feel free to add up 24 peppers.
  2. Open your windows.
  3. In a food processor, drop the peppers in while the blade runs and stand back. (the vapours can choke you if you stand right over the machine)
  4. Once minced, add all of the remaining ingredients and pulse to your desired consistency.
  5. Let this mixture sit a week or two before eating it to allow it to mellow.
  6. I store mine in small containers and freeze all save one which I leave in my fridge for use on dhal puri with goat curry.

Very nice!! I make a Mango Habby BBQ sauce that is very similar only not as many peppers. Sounds like a delicious sauce. I am not sure I agree with you about the unripe habbys being hotter but when we are talking this kind of heat.. It really doesnt matter... ;-)~~ High five..
