Chicken And Sausage Gumbo

- seasoning MIX: shopping list
- 1 1/2 tsp cayenne pepper shopping list
- 1 1/2 tsp paprika shopping list
- 1 tsp salt shopping list
- 1/2 tsp white pepper shopping list
- 1/2 tsp black pepper shopping list
- 1/2 tsp thyme leaves shopping list
- 1/2 tsp oregano leaves shopping list
- 1 bay leaf, crumbled shopping list
- INGREDIENTS FOR GUMBO: shopping list
- 3/4 cup chicken broth shopping list
- 2 cups celery, chopped shopping list
- 2 cups onions, chopped shopping list
- 2 cups green bell peppers, chopped shopping list
- 3 tbsp Zatarain's Pure Ground Gumbo File' powder shopping list
- 1 tbsp Tabasco sauce shopping list
- 1 tsp minced garlic shopping list
- 1 1/2 cups tomato sauce shopping list
- 7 cups chicken broth shopping list
- 1 lb keilbosa smoked sausage shopping list
- 6 cups chicken, cooked and chopped shopping list
- cooked white rice shopping list
How to make it
- Combine seasoning mix in a small bowl and set aside.
- In a 4 quart heavy soup pot, combine 3/4 cup chicken broth with onions, celery, and bell peppers. Cook until vegetables are tender.
- Turn heat to high and stir in the gumbo file' powder, Tabasco sauce, garlic, and seasoning mix. Cook 6-8 minutes. stirring constantly.
- Reduce heat to medium and stir in tomato sauce; continue cooking 5 minutes. stirring constantly. During this time, the mixture will begin sticking to the bottom of the pan and smoke really bad, not to worry. Just keep stirring constantly.
- Add the 7 cups of chicken broth and bring to a boil.
- Add chicken and sausage. Reduce heat to a simmer, cover and simmer for 45 to 60 minutes, stirring occasionally.
- Serve gumbo over cooked white rice.
