Chicken Patties Recipe

Ingredients

2 cups cooked chicken, shredded

1/2 cup crushed crackers (I use whatever I have on hand)

1/3-1/2 cup mayonnaise

4 scallions, finely chopped

2 tbls. lemon juice

Salt and Pepper

2 tbls. canola oil

Directions

In mixing bowl, combine chicken, cracker crumbs, mayo, onions, lemon juice, salt and pepper

Heat oil in skillet over medium high heat

Shape mixture into patties, whatever size you want

Fry patties 2-3 minutes on each side or until golden brown

I followed recipe exactly and made 2 small patties, one I rolled in bread crumbs before I fried it. Very good either way.
