Ingredients

How to make it

  • In mixing bowl, combine chicken, cracker crumbs, mayo, onions, lemon juice, salt and pepper
  • Heat oil in skillet over medium high heat
  • Shape mixture into patties, whatever size you want
  • Fry patties 2-3 minutes on each side or until golden brown

    I had some leftover chicken. So thought I would mix these up today and give a test run before I tried them for dinner. They passed!

    I followed recipe exactly and made 2 small patties, one I rolled in bread crumbs before I fried it. Very good either way.

    I LOVE the sound of this Wynne! We usually cook up a bunch of chicken and use leftovers as we need them...what a great and different way to do it! :) Just one question - when do we use the mayo? lol.. ^5 My friend
