Pork Tenderloin and Blood Orange Teriyaki Sauce

- 1 pork tenderloin, about 1 lb in weight shopping list
- 1/4 tsp each salt and pepper shopping list
- 1/4 cup blood orange ginger Teriyaki grilling sauce shopping list
- 1 lb mini potatoes, washed, and unpeeled shopping list
- 1 tsp pure olive oil shopping list
- 1/2 red onion, sliced shopping list
- 4 baby Bok Choi, quartered shopping list
- 1 red sweet pepper, sliced shopping list
- 1 clove garlic, minced shopping list
- 2 blood oranges, peeled & sectioned shopping list
- 1/4 cup orange juice, with pulp shopping list
- 1/2 cup chicken broth shopping list
- 1/2 tsp cornstarch shopping list
How to make it
- preheat oven to 400*F
- season pork with the salt & pepper; brush with Teriyaki sauce
- cook potatoes in salted water until tender; drain
- heat 2 tsp olive oil in large ovenproof skillet, over medium-high flame
- sear pork on all sides, about 4 minutes per side
- add potatoes, cover, and place skillet in the oven
- cook pork to medium, about 25 to 30 minutes
- remove from oven & transfer to plate; tent with foil
- Meanwhile, heat remaining oil in another skillet, over medium high flame
- saute onions, bok choi, red pepper and garlic until tender~crisp, about 3 minutes
- add salt, pepper, and orange segments
- transfer to pork and potato platter

- The Teriyaki Sauce:
- in the same skillet, over medium~high flame, add remaining Teriyaki and orange juice
- bring to a boil
- in a small bowl, whisk broth and cornstarch until smooth.
- whisk into the orange juice mixture, and simmer until thickened, about two minutes
- ===================================
- To serve:
- carve tenderloin into 12 slices
- drizzle with the sauce
- serve with potatoes and veggies
