Pork tenderloin, cooked on the stovetop first to sear, then finished in the oven, served with a rich Teriyaki sauce. A guaranteed pleaser!

Ingredients
  • 1 pork tenderloin, about 1 lb in weight
  • 1/4 tsp each salt and pepper
  • 1/4 cup blood orange ginger Teriyaki grilling sauce
  • 1 lb mini potatoes, washed, and unpeeled
  • 1 tsp pure olive oil
  • 1/2 red onion, sliced
  • 4 baby Bok Choi, quartered
  • 1 red sweet pepper, sliced
  • 1 clove garlic, minced
  • 2 blood oranges, peeled & sectioned
  • 1/4 cup orange juice, with pulp
  • 1/2 cup chicken broth
  • 1/2 tsp cornstarch

Directions
  1. preheat oven to 400*F
  2. season pork with the salt & pepper; brush with Teriyaki sauce
  3. cook potatoes in salted water until tender; drain
  4. heat 2 tsp olive oil in large ovenproof skillet, over medium-high flame
  5. sear pork on all sides, about 4 minutes per side
  6. add potatoes, cover, and place skillet in the oven
  7. cook pork to medium, about 25 to 30 minutes
  8. remove from oven & transfer to plate; tent with foil
  9. Meanwhile, heat remaining oil in another skillet, over medium high flame
  10. saute onions, bok choi, red pepper and garlic until tender~crisp, about 3 minutes
  11. add salt, pepper, and orange segments
  12. transfer to pork and potato platter
  13. ===================================
  14. The Teriyaki Sauce:
  15. in the same skillet, over medium~high flame, add remaining Teriyaki and orange juice
  16. bring to a boil
  17. in a small bowl, whisk broth and cornstarch until smooth.
  18. whisk into the orange juice mixture, and simmer until thickened, about two minutes
  19. ===================================
  20. To serve:
  21. carve tenderloin into 12 slices
  22. drizzle with the sauce
  23. serve with potatoes and veggies
