Lemon Yogurt Poppyseed Muffins Recipe

Ingredients

2 cups flour

1 teaspoon baking powder

1 teaspoon baking soda

1/4 teaspoon salt

1/4 cup sugar

1 1/2 tablespoons poppy seeds

2 eggs

1 1/4 cups plain yogurt, room temperature

1/4 cup butter/margarine, melted

1 tablespoon lemon zest

2 tablespoons honey

1/4 cup lemon juice

1/4 cup sugar

1 tablespoon water

Directions

Combine flour baking powder, soda, salt, sugar, and poppyseeds; set aside. In another bowl, combine honey, eggs, yogurt, margarine, and lemon peel. Add dry ingredients, mix until just combined. Spoon into greased muffin tin. Bake at 350 degrees for 15-20 minutes or until lightly brown. .

While baking make lemon syrup by combining lemon juice, sugar, and water in glass measuring cup. Microwave 1-1 1/2 minutes or until mixture boils 1 minute. Drizzle syrup over warm muffins or dip top of muffins in the syrup. Makes 12 muffins

Jo Jo... I think part of the sweetness comes from the yogurt that is sweetened... but please let me know, if you make these, what you think...
