How to make it

  • Combine flour baking powder, soda, salt, sugar, and poppyseeds; set aside. In another bowl, combine honey, eggs, yogurt, margarine, and lemon peel. Add dry ingredients, mix until just combined. Spoon into greased muffin tin. Bake at 350 degrees for 15-20 minutes or until lightly brown. .
  • While baking make lemon syrup by combining lemon juice, sugar, and water in glass measuring cup. Microwave 1-1 1/2 minutes or until mixture boils 1 minute. Drizzle syrup over warm muffins or dip top of muffins in the syrup. Makes 12 muffins

    Jo Jo... I think part of the sweetness comes from the yogurt that is sweetened... but please let me know, if you make these, what you think...

    Really? Only 1/4c of sugar?? Even with the glaze I'd think too tart... have to try it and see I guess!

    Oh my gosh, that lemon syrup poured over the warm muffins sounds delish! I love anything with lemon these days, so I will have to make a batch of these soon - not too high on the sugar either, so that's perfect. Thanks!
