Lemon Yogurt Poppyseed Muffins

- 2 cups flour shopping list
- 1 teaspoon baking powder shopping list
- 1 teaspoon baking soda shopping list
- 1/4 teaspoon salt shopping list
- 1/4 cup sugar shopping list
- 1 1/2 tablespoons poppy seeds shopping list
- 2 eggs shopping list
- 1 1/4 cups plain yogurt, room temperature shopping list
- 1/4 cup butter/margarine, melted shopping list
- 1 tablespoon lemon zest shopping list
- 2 tablespoons honey shopping list
- 1/4 cup lemon juice shopping list
- 1/4 cup sugar shopping list
- 1 tablespoon water shopping list
How to make it
- Combine flour baking powder, soda, salt, sugar, and poppyseeds; set aside. In another bowl, combine honey, eggs, yogurt, margarine, and lemon peel. Add dry ingredients, mix until just combined. Spoon into greased muffin tin. Bake at 350 degrees for 15-20 minutes or until lightly brown. .
- While baking make lemon syrup by combining lemon juice, sugar, and water in glass measuring cup. Microwave 1-1 1/2 minutes or until mixture boils 1 minute. Drizzle syrup over warm muffins or dip top of muffins in the syrup. Makes 12 muffins

Oh my gosh, that lemon syrup poured over the warm muffins sounds delish! I love anything with lemon these days, so I will have to make a batch of these soon - not too high on the sugar either, so that's perfect. Thanks!
