  • Cake Ingredients:
  • 1 (18.25-ounce) package spice or carrot cake mix
  • 1 cup water
  • 1 large (2/3 cup) ripe banana, mashed
  • 3 eggs
  • 3/4 cup sweetened flaked coconut
  • ========================
  • Frosting Ingredients:
  • 4 cups powdered sugar
  • 1/2 cup butter, softened
  • 1/4 cup milk
  • 1 teaspoon coconut extract or vanilla
  • 1/2 cup sweetened flaked coconut, toasted

Directions
  1. Heat oven to 350°F. Grease and flour two (9-inch) round cake pans. Set aside.
  2. Combine cake mix, 1 cup water, banana and eggs in large bowl. Beat as directed on package. Stir in 3/4 cup coconut by hand.
  3. Pour batter evenly into prepared pans. Bake for 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans. (Run knife around side of pans before removing.) Cool completely.
  4. Meanwhile, combine 2 cups powdered sugar, butter, milk and extract in large bowl. Beat at medium speed, scraping bowl often, until creamy. Gradually add remaining powdered sugar, mixing until well blended.
  5. Place 1 cake layer onto serving plate; spread with 1/2 cup frosting. Cover with second cake layer; spread top and sides of cake with remaining frosting. Sprinkle with toasted coconut.

I love banana cake and the addition of coconut has to make this one heavenly. Will be making for a co-workers birthday on Monday. Thans again for another great cake recipe. Yummy.

This was a lovely cake at my brunch. Sliced thin it went in less than a half hour. 2 of my sweet tooth friends started out with the cake. I feel the banana really adds moistness and texture. I used the carrot mix. Thanks for this lovely cake.


I love banana and coconut so this will be a cake I will do and will let you no what the family and I think ,,,,, I no there all gonna love it.


Well I got to bake this cake tonight with my granddaughter and man we have just cut up piecies after hours of waiting for cake to cook cool and ice and its yummmmmmmmmmmmmmmmmmmmmmmm,,,,The kids are crazy of the taste. I believe the next time I make this cake it will taste even better than the first one......yuuumeeeee

Yummmmmmmmmmmmmmeeeeeeeeee my cake turned out even heaps and heaps better than the first one I made best cake even loveeeeeeeeeeeeeeeee it, and the grandkids couldnt get enough of this yummy banana coconut cake
