Southwest Egg Rolls

- 1 lb ground pork shopping list
- 1 small yellow onion, finely chopped shopping list
- 2 cloves of garlic (medium size), finely chopped shopping list
- ¼ cup green bell pepper shopping list
- 1 lg jalapeno, seeded and finely chopped shopping list
- 1 ¼ cup roasted peppers, chopped shopping list
- 2 tbls Mexican seasoning shopping list
- 1 cup chicken stock shopping list
- 1 15oz. can of black beans, rinse shopping list
- ¼ cup soy sauce shopping list
- salt & pepper to taste shopping list
- 4 cups mozzarella cheese shopping list
- 3 tbs. cilantro shopping list
- peanut or canola oil shopping list
- Dipping sauce: shopping list
- 2 cups of ranch dressing shopping list
- ½ cup of diced tomatoes shopping list
- ½ cup onions, diced shopping list
- ½ cup jalapenos, finely chopped shopping list
- 2 tbls cilantro, finely choped shopping list
How to make it
- First, brown the pork in a deep frying pan. After the pork has browned, add the onions, garlic, green bell pepper, jalapeno, roasted red peppers and sauté for about 10 minutes. Add the Mexican seasoning and sauté for another 10 minutes; next deglaze the pan with the chicken stock until all of the brown bits come up from the bottom of the pan. Next add the rinsed black beans, cilantro and soy sauce, (if you are using) and salt and pepper to taste. Simmer the meat mixture for about another 10 minutes. At this point you can set aside until cooled then refrigerate for at least 2 hours. You can prepare the meat mixture a day ahead to allow the spices and herbs blend together to achieve a deeper flavor.
- When you are ready to make the egg rolls, just follow the instructions on the egg roll package which has a diagram on how to roll it properly. Use about 2 tbls of the meat mixture and start rolling. I purchased a 16oz. package of Wing Hing Foods Egg Roll
- Wraps. Whatever brand you choose, should have the rolling instructions on the package. Deep fry the egg rolls in peanut oil or canola oil, (I used canola oil).
- Dipping sauce:
- 2 cups of Ranch Dressing
- ½ cup of diced tomatoes
- ½ cup onions, diced
- ½ cup jalapenos, finely chopped
- 2 tbls cilantro, finely choped
