Pesto Pasta With Green Beans And Potatoes Recipe

Ingredients
  • 1/2 pound dry penne pasta
  • 4 red potatoes in 1/4" slices
  • 1/4 pound fresh green beans in 2" pieces
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1/2 cup plain yogurt
  • 1/3 cup prepared pesto
  • 1/4 cup Parmesan cheese

Directions
  1. Bring a large pot of salted water to the boil.
  2. Cook the pasta for 8 to 10 minutes OR until al dente.
  3. Remove from heat, drain and return to pot.
  4. Par-cook potatoes in medium saucepan of boiling water, about 7 minutes.
  5. Place beans in pan with potatoes and continue cooking for three minutes.
  6. Drain the partially cooked potatoes and beans and set aside.
  7. Heat olive oil in large skillet over medium heat and saute the garlic 1 minute.
  8. Stir in the potatoes and beans.
  9. Season with salt and pepper.
  10. Cook and stir until potatoes and beans are tender and lightly browned.
  11. Toss the potato mixture into the pot with the drained pasta.
  12. Mix in yogurt, pesto and Parmesan cheese.
  13. **Reserve a little Parmesan to sprinkle when serving.
