Here's mine!
#1. Chicken pot pies: remove meat from chicken.
In large bowl, mix chicken, 1 can of cream of chicken soup, 1 can of mixed chunky style vegetables,2 teaspoons butter. Season with salt and pepper. Preheat oven to 350 degrees. Pour mixture into frozen pie crust. Top with second crust and seal edges with fork. Cut two to three slices in crust to vent. Place in oven and bake 25 to 30 minutes.

Slice breast meat, and place atop a hearty greens & veggie salad.
Use legs and wings as snacks for later, and carcass for THOUP! :+D

We've used the meat to make croquettes. Ed's even been able to coax a bit of gravy from the stuff remaining in the plastic container and we augment that with a jarred gravy. Serve croquettes with a veggie and masheds and you're good to go!

This isn't a really quick idea, but last time I made my Enchiladas Monterey, I used a roasted chicken. The flavor was excellent, and it did save a lot of prep time, having the chicken already cooked. Might use one every time now!

Mix gardini's caesar dressing with chopped romaine. add your favorite croutons and freshly grated parmesan to taste. Layer on top of a tortilla or wrap. Add tomatoes, sliced chicken. Wrap like a buritto. You could also add onions, avacado or your favorite veggie.

Wow some really good ideas! We like to have the leg and thigh for dinner with rice and vegetables. Slice the chicken breast for another meal with a large salad the next night and save the carcass for stock. Once we have about 3 carcasses we turn on the stockpot!

Another great use is to take 2 cups of the meat from the chicken, chop it and mix it with 1 or 2 packets of Chicken taco seasoning and a little water. Use for chicken tacos adding a little fresh cilantro, shredded cheese, tomatoes and lettuce! Serve fresh lime slices on the side!
