Mediterranean Quesadilla Recipe

Ingredients

2 large flour tortillas

200 grams of chilled Brie (or Camembert, Bois Blond, Chêvre... any soft cheese)

1-2 tsp Mexican seasoning or Essence (both recipes available on grouprecipes.com)

12-15 sundried tomatoes

1/4 cup hot water

1/4 cup pine nuts - toasted

1 Tbsp Fresh cilantro - finely chopped *optional

Guacamole and sour cream for serving

Directions

Soak the tomatoes in the hot water for 10 minutes

Slice the chilled cheese in thin slices and lay them on the first tortilla leaving a 1 inch border from the edge.

Sprinkle with seasoning, cilantro and pine nuts.

Remove the tomatoes from the liquid, pat slightly dry and lay over the cheese and pine nuts.

Cover with the second tortilla and invert into a large enough pan.

Heat on medium, tomato side down, until the tortilla begins to crisp and brown, pressing down to help meld everything together, about 3-5 minutes.

Flip and continue to fry until second side is crisp and cheese begins to ooze.

Serve immediately with guacamole (plenty of recipes on grouprecipes.com if you need) and sour cream.
