Sour Cream Rhubarb Coffee Cake Recipe

Ingredients

2 cups diced rhubarb( could be apples , peaches etc. )

1 1/2 cups sugar

1 tsp baking soda

1 cup sour cream

dash salt

2 cups flour

dash nutmeg to taste

butter to taste

Directions

Mix rhubarb and 1/2 cup sugar and let stand 30 minutes

Stir baking soda into sour cream

Sift, flour, salt and 1 cup sugar

Combine everything together, mixture will be thick

Spread mixture in a 9 inch pan

Sprinkle with extra sugar, nutmeg and some pats of butter

Bake 350F for 30 to 40 minutes or tested done

Serve warm or at room temperature
