Sour Cream Rhubarb Coffee Cake

- 2 cups diced rhubarb( could be apples , peaches etc. ) shopping list
- 1 1/2 cups sugar shopping list
- 1 tsp baking soda shopping list
- 1 cup sour cream shopping list
- dash salt shopping list
- 2 cups flour shopping list
- dash nutmeg to taste shopping list
- butter to taste shopping list
How to make it
- Mix rhubarb and 1/2 cup sugar and let stand 30 minutes
- Stir baking soda into sour cream
- Sift, flour, salt and 1 cup sugar
- Combine everything together, mixture will be thick
- Spread mixture in a 9 inch pan
- Sprinkle with extra sugar, nutmeg and some pats of butter
- Bake 350F for 30 to 40 minutes or tested done
- Serve warm or at room temperature
