Salt And Pepper Chicken Recipe
After recently falling in love with the salt and pepper squid at my favorite Chinese restaurant and not having any calamari at home I tried this with chicken instead. It took me a few tries with the flour mixture but I finally got it.

Ingredients
  • Chicken tenderloins (3 per person)
  • 2c whole milk
  • hot sauce with vinegar in it like Franks or Tabasco
  • Cajun seasoning
  • 2 eggs
  • salt
  • pepper
  • 1c corn starch
  • oil for frying

Directions
  1. Add a liberal amount of the hot sauce and Cajun seasoning to the milk and marinade your chicken a few hours
  2. in a separate bowl scramble your eggs
  3. in a flat baking dish add a good amount 1/2 tsp or more of the salt and pepper to the cornstarch.
  4. dredge each piece of chicken in the egg mixture then the corn starch and lay it gently into 350 degree oil. I could only get 3 pieces in the pan at a time before the oil started cooling down.
  5. let the chicken cook about 2 minutes on both sides
  6. enjoy
