How to make it

  • Pre heat your oven to 400 degrees....if your oven bakes hot reduce to 375 degrees.
  • Chop the figs add the brown sugar - add approximately 1 cup water - allow to come to a boil and turn to low heat - stirring often, allow the mixture to reduce and come to a soft paste. Remove from heat and set to cool.
  • Sift flour, baking powder, salt, mix well, add sugars and cut in your butter make a soft dough. Wrap in plastic wrap and place in the fridge for 30 mins.
  • On a well flour surface take the dough and roll out to 1/2 inch thick cut long strips 3 inches wide.
  • Spread fig mixture in the center and fold the dough over to create a seam - pinch firmly.
  • Bake for 12-15 minutes - check them at 10 minutes for color - this is a eye bake so these are not cookies you can set and forget these have to be watched.
  • When removed from the oven cut into 2 inch cookies. Enjoy!
