Fig Bars

- 2 cups figs (chopped) shopping list
- 2 1/2 cups flour shopping list
- 1/4 tsp. salt shopping list
- 1/2 cup sugar (white) shopping list
- 1 Tbsp. sugar (brown) (for the fig mixture) shopping list
- 2 tsps. baking powder shopping list
- 1/2 cup brown sugar (for the dough) shopping list
- 3/4 cup butter (soft) shopping list
How to make it
- Pre heat your oven to 400 degrees....if your oven bakes hot reduce to 375 degrees.
- Chop the figs add the brown sugar - add approximately 1 cup water - allow to come to a boil and turn to low heat - stirring often, allow the mixture to reduce and come to a soft paste. Remove from heat and set to cool.
- Sift flour, baking powder, salt, mix well, add sugars and cut in your butter make a soft dough. Wrap in plastic wrap and place in the fridge for 30 mins.
- On a well flour surface take the dough and roll out to 1/2 inch thick cut long strips 3 inches wide.
- Spread fig mixture in the center and fold the dough over to create a seam - pinch firmly.
- Bake for 12-15 minutes - check them at 10 minutes for color - this is a eye bake so these are not cookies you can set and forget these have to be watched.
- When removed from the oven cut into 2 inch cookies. Enjoy!

Great post....I live 20 miles from Newton, where Fig Newtons were invented...These sound so much better....:)
