How to make it

  • Combine cream cheese, sour cream, and pesto. Put in plastic sandwich bag and set aside.
  • Cut the tops off cherry tomatoes. Core, being careful not to cut all the way through.
  • Sprinkle tomatoes with salt, and invert to drain on paper towels (10-15 minutes).
  • With a clean paper towel, wipe out excess salt.
  • Snip corner off sandwich bag and pipe pesto mixture into tomatoes. Refrigerate until ready to serve.

    This is one recipe that veganizing would change enough that I would not give a rating based on alterations, but the idea is splendid! Might have to make some nice hor's orderves this summer based on this idea. Thanks!
