Keep Me Coming Back For More Enchiladas

- 8 flour tortilla shopping list
- 1 lb ground meat (I used turkey) shopping list
- 8 Oz pepper jack cheese - shredded shopping list
- 1 can diced green chilies shopping list
- 1 med onion - chopped shopping list
- 1 can green chili enchilada sauce shopping list
- 1 healthy pinch ground pepper shopping list
- 1 can red kidney beans - drained and rinsed shopping list
- 1 can corn - drained shopping list
How to make it
- Brown the meat drain and rinse if desired
- Sauté the onion
- mix onion, meat, chilies, corn, beans and 1/2 the cheese
- Pour 1/2 the green chili enchilada sauce in the baking pan
- Warm the tortillas and roll the filling inside place seam side down in the baking dish, pour the rest of the enchilada sauce over the enchiladas and cover with foil.
- Bake at 350 for 30 minutes, uncover add the rest of the cheese to the enchiladas and bake an additional 10 minutes until cheese is melted.
