How to make it

  • Preheat oven to 325.
  • In a medium bowl combine vanilla wafer crumbs, sugar, chopped pecans and butter.
  • Blend well with pastry blender then press into bottom of buttered spring form pan.
  • Chill in the freezer for 15 minutes.
  • In a large bowl beat cottage cheese, sugar and eggs until smooth.
  • Add vanilla and light cream then continue to beat until smooth and fairly thick.
  • Gently fold in the crushed peaches then pour mixture into chilled pan.
  • Place springform pan inside of a larger pan containing 1“ water and bake 1-1/2 hours.
  • Transfer cake to a wire rack and allow to cool 30 minutes.
  • In a small mixing bowl beat sour cream and sugar until smooth.
  • Spread mixture evenly over top of cake and bake at 350 for 5 minutes.
  • Transfer cake to a wire rack and let cool completely.
  • Remove sides of the springform pan and decorate top of cake with sliced peaches.
  • Refrigerate overnight then remove cake from refrigerator 2 hours before serving

    I love fresh peaches, and I copied and pasted this recipe, so when fresh peaches are in season, I'll try it out.

    Mmmm! I have not used cottage cheese in a cheesecake although ricotta cheese usually makes an appearance, meow! This sounds great and perhaps now is the time for me to switch to cottage cheese. I have taken the liberty of putting recipe in my Cheesecake Angels group. Now that I have it, I don't want to lose it. Thanks and my five, meow!
