Ingredients

How to make it

  • Heat olive oil in a large skillet over medium high heat.
  • Fry the halibut steaks on all sides until nicely browned.
  • Remove from pan and set aside.
  • Pour the wine into the pan and scrape up any browned bits.
  • Let the wine reduce to almost nothing.
  • Stir in garlic, butter and capers.
  • Season with salt and pepper to taste.
  • Allow sauce to simmer for a minute to meld flavors.
  • Return steaks to pan and coat with sauce.
  • Cook until fish is flaky when nudged with a fork.
  • Serve fish immediately with sauce from the pan over it.
