Halibut and Capers

- 1 tablespoon olive oil shopping list
- 2 (8 ounce) halibut steaks shopping list
- 1/2 cup dry white wine shopping list
- 1 teaspoon garlic, chopped shopping list
- 1/4 cup butter shopping list
- salt and pepper to taste shopping list
- 3 tablespoons capers, with liquid shopping list
How to make it
- Heat olive oil in a large skillet over medium high heat.
- Fry the halibut steaks on all sides until nicely browned.
- Remove from pan and set aside.
- Pour the wine into the pan and scrape up any browned bits.
- Let the wine reduce to almost nothing.
- Stir in garlic, butter and capers.
- Season with salt and pepper to taste.
- Allow sauce to simmer for a minute to meld flavors.
- Return steaks to pan and coat with sauce.
- Cook until fish is flaky when nudged with a fork.
- Serve fish immediately with sauce from the pan over it.
