This is an easy pulled pork recipe that doesn't even need BBQ sauce added to it. It uses lots of cider vinegar, so watch out cause it will stink up your house. Well worth it!

Ingredients
  • 1/4 cup packed light brown sugar
  • 1 teaspoon cayenne pepper
  • salt and pepper
  • 3 pounds boneless pork shoulder, cut into 4 equal pieces
  • 1 1/2 cups cider vinegar
  • 4 garlic cloves, minced
  • 8 soft sandwich rolls
  • Sweet Baby Ray's BBQ sauce (optional)

Directions
  1. Preheat oven to 350 degrees with racks in lower and upper positions.
  2. In a small bowl, combine sugar, cayenne, 1 tablespoon salt, and 1 teaspoon pepper.
  3. Place pork in a 5-quart dutch oven; rub with spice mixture.
  4. In a medium bowl, combine vinegar, garlic, and 1/2 cup water; pour over pork.
  5. Cover pot, place on lower rack, and bake until pork is tender and easily pulls apart with a fork - 2 to 2 1/2 hours.
  6. Transfer pork to a work surface, reserving pan juices. Shred meat using two forks. (I prefer to leave larger chunks rather than shredding every little piece)
  7. Transfer meat to a large bowl and add enough pan juices to keep moist. Use extra if you will be storing meat because it will soak up the juices.
  8. ***If you want to use BBQ sauce, also: either gently mix it into the meat mixture or pour some on after you've put it on the rolls.

Sounds mouth-watering, great post!

So you've told me about this often enough - now I have to actually try it...guess you're not going to bring me any?!?!??? That does sound like a lot of vinegar, but I'll take your word for it - we have similar enough tastes that I know I'll like it. You're on a roll tonight, honey!

My family loves pulled pork sandwiches. WE also love that Sweet Baby Ray's BBQ sauce, we use it on everything we can. Thanks for sharing this recipe. Im going to try it out next time we have pps.

Ok, daughter of mine, I made this for dinner tonight. It was AWFUL!!!! Ok, I'm kidding...this was some of the most tender pork I've ever eaten. I knew the vinegar would be a great tenderizer, but I worried that it would overpower the flavor of the meat...not so at all. Tender, very moist, lightly spiced! We ate in on toasted buns, with a little added Sweet Baby Ray's on top - these are definitely delicious and ridiculously easy. Way to go, honey - another keeper you've found for your mama!! PS - I posted some pics for you...
