Couscous ala Corinne

- 2 tbls. currants shopping list
- hot water to cover currants shopping list
- 3/4 cup onion, chopped shopping list
- 1 tbls. olive oil shopping list
- 1 tbls. curry powder shopping list
- 1/4 tsp. garlic powder shopping list
- 1 can (14 1/2 oz.) chicken broth shopping list
- 1 cup couscous shopping list
- 1 cup red delicious apple, chopped shopping list
- 1/4 cup pine nuts shopping list
- 2 scallions, sliced on the diagonal shopping list
How to make it
- Put currants and hot water in bowl and soak for 10 minutes
- Drain and set aside
- In skillet, saute onion in oil until tender
- Stir in curry and garlic, then set aside
- In saucepan, bring broth to boil
- Remove form heat
- Stir in onion mixture and couscous
- Cover and lat stand 5 minutes
- Stir in currants, apple and pine nuts
- Sprinkle with scallion

This is an interesting recipe for me because I haven't had anything like it. I am so eager to see how this one taste. It does sounds very good.
