  • 11/2 cups Chantilly Dressing (see recipe included)
  • 4 lb crisp, red eating apples
  • 1 lb celery, small dice
  • 4 oz Walnuts, coarsely chopped
  • 25 each Lettuce cups
  • 2 oz Chopped walnuts optional garnish
  • =========================================
  • The Chantilly Dressing:
  • Simple to make.... to 2 cups mayonnaise, simply add 1 cup of whipped cream.

Directions
  1. Prepare the dressing.
  2. Place it in a large stainless-steel bowl and have it ready in the refrigerator.
  3. Core the apples and dice them to 1/2 inch, without peeling them.
  4. As soon as the apples are cut, add them to the dressing and mix in to prevent darkening.
  5. Add the celery and walnuts.
  6. Fold in until evenly mixed.
  7. Arrange the lettuce cups as bases on cold salad plates or in bowls.
  8. Using a scoop, place a mound of salad on each plate.
  9. If garnish is desired, sprinkle each salad with about 1 tsp chopped nuts.
  10. Hold in refrigerator until ready to serve.

  12. Notes:
  13. Plain mayonnaise may be used instead of Chantilly dressing.

  15. Variations:
  16. Any of the following ingredients may be added to the basic Waldorf mixture.
  17. If any of these changes is made, the item should no longer be called simply' Waldorf Salad'.
  18. Change the menu name to indicate that the product contains other ingredients.
  19. For example: 'Pineapple Waldorf Salad' or 'Apple Date Salad'.
  20. 8 oz diced pineapple
  21. 4 oz chopped dates, substituted for the walnuts
  22. 4 oz raisins, plumped in hot water and drained
  23. 1 lb shredded cabbage or Chinese cabbage, substituted for the celery.
  24. ENJOY!

I love Waldorf Salads!!! I make a similar one with cucumbers and cranraisins! This sounds wonderful also! The dressing sounds very good!
