I made these yesterday and was so very happy I did. They taste wonderful. The lemony taste and the moistness from the buttermilk make this cookie a keeper! I took it to my class with me and everyone asked for the recipe.

Ingredients
  • Lemon Buttermilk Cookies Adapted from Gourmet (This is a half batch, it made about 30 cookies)
  • 1 ½ cups unbleached all-purpose flour
  • Zest of two lemons (I added extra)
  • ¼ tsp. baking soda
  • ¼ tsp. salt
  • 6 Tbsp. (3 oz.) unsalted butter, at room temperature
  • ¾ cup granulated sugar
  • 1 large egg
  • ½ tsp. vanilla extract
  • 1/3 cup well-shaken buttermilk
  • For the glaze:
  • ¾ cup confectioners sugar, sifted
  • 1 ½ Tbsp. well-shaken buttermilk
  • ¼ tsp. vanilla extract Lemon zest (I added this)

Directions
  1. Line 2 large baking sheets with parchment paper or silicone liners. Preheat the oven to 350°F.
  2. In a medium bowl, whisk together the flour, zest, baking soda, and salt.
  3. In the bowl of a stand mixer, beat the butter briefly, until creamy. Add the sugar, and beat until pale and fluffy. Add the egg, and beat well to mix. Add the vanilla, and beat briefly again. Mix in the flour mixture and the buttermilk in batches at low speed, beginning and ending with the flour. Scrape down the sides of the bowl with a rubber spatula as needed.
  4. Drop the dough by level tablespoons onto the prepared baking sheets, leaving about 1 ½ inches between each cookie. Bake, 1 sheet at a time, for about 11 minutes per batch. Cool the cookies on the baking sheet for 1 minute; then transfer them to a wire rack.
  5. For the glaze, whisk together the sifted confectioners sugar, buttermilk, and vanilla. I also added in lemon zest. Brush or spoon the glaze onto the warm cookies. Allow cookies to sit on the rack until the glaze is set.

These look and sound amazing! I love lemon flavor, and can almost taste these guys already! Nice glaze here, too!

These sound great! If I'm going to eat sweets, lemon is the way to go. You should check out the snowflake cookies (I actually don't know the name she posted it under) my mom posted. I made them for our cookie exchange last year and they were tasty! They had a pretty similar glaze on them.

Oh Michelle, those are definitely going to be in the oven as soon as I'm back in the kitchen again - those look fantastic! Erin's right - the glaze is similar to the cookie she made for the cookie exchange, and that lemon glaze is what made them soooo delicious...I'm sure it does the same for these. I'm printing this one off so it can be "next made"!

I'm saving this recipe! I can't seem to get away from these great cookie recipes and your recipe sounds delicious! Thanks so much for posting your recipe here!

Loved your oatmeal cookies so I can't wait to try these, they sound wonderful, Lovin' Lemon here...:)

I love this and will be trying this, next week!

Oh, my - WHAT can I say? I love lemon, and love buttermilk!
HIGH FIVE, good buddy!!!!!!

Elaine :+D

Michelle, these were sooooo good...John and I have munched on way too many this afternoon - they are addictive! I added the zest to the glaze, as you suggested, and also added about a tablespoon of lemon juice. The lemon flavor comes out excellent - not overpowering, but nicely tart! I will be making these many times over, and will have to make another batch for Qwikdraw - you know how she loves lemon, too...thanks for another cookie keeper for my growing collection (thanks mostly to you!) ~ Krum
