Yankee Salad

- 16 ounce package uncooked orzo pasta shopping list
- 3/4 cup white sugar shopping list
- 2 eggs, beaten shopping list
- 2 tablespoons all-purpose flour shopping list
- 1/2 teaspoon salt shopping list
- 2 (20 ounce) cans crushed pineapple, drained (juice reserved) shopping list
- 1 cup mandarin orange segments, drained and chopped shopping list
- 1 (10 ounce) jar maraschino cherries, drained and chopped shopping list
- 12 ounce container frozen whipped topping, thawed shopping list
How to make it
- In a large pot of salted boiling water cook orzo until al dente.
- Rinse pasta under cold water and drain.
- Set aside.
- In saucepan combine the sugar, eggs, flour, salt and pineapple juice and cook over medium heat until mixture thickens.
- Remove from heat and cool.
- Toss pasta and fruits together in large bowl.
- Cover and refrigerate overnight.
- Remove from refrigerator and break up chilled pasta with a spoon.
- Mix in the pineapple, oranges and cherries.
- Fold in the thawed whipped topping.
- Chill.
- Serve.
